Carbón - Restaurant on fire The restaurant Carbón opened up its doors on Rue Charlot, just a few months ago. After seeing some rather provocative pictures of the place and the dishes, we thought we ought to try the new address. Carbón,  which means coal in spanish, is a restaurant all about cooking with woodfire. This is a more traditional method but, when well done, it gives a more refined taste to the dishes and enhances the flavors. The menu is more carnivorous oriented (the more ferocious ones will maybe share the côte de boeuf or half poultry) but there is also fish and vegetables for some impressive dishes between earth and sea. In terms of decor and atmosphere, it is in the same vein as the dishes: woody and natural. The space is well organised and it is all very sober but fresh and luminous. You feel at ease and let yourself be tempted by another cocktail with roasted pineapple or 'flambé' for more effect!   For more information and all reservations, head to the official website and their Instagram!
